Torture!

I had my three hour glucose testing today and wasn't it exciting. I took Cole over To Mamie and Lucy's to play so he wouldn't have to sit through it with me. Believe me he had a lot more fun than I did.

When I first got there they drew my blood then gave me the extra sugary drink. I waited an hour had blood drawn. I did this two more times after that. I had my blood drawn a total of four times in three hours. On top of that I had to go in fasting so having nothing in my stomach but all that nasty sugar I wasn't feeling all to well half way through. What a fun way to spend my morning. I should have the results back Monday or Tuesday so I will keep you updated.

Cole did really well at Mamie's. This was actually the first time I have left him any where besides family, so I am thrilled that he did well. I went to pick him up, Mamie made some lunch and we visited for a while. Then we drove by a couple rental homes in her neighborhood. Which later me and Tom went and looked at one of them on the inside. It was being painted but it looked pretty nice. They are doing all new paint, carpet and cabinets. Tom is going to call on it tomorrow. And yeah, tomorrow is Friday!

Take Me Out to the Ball Game

Tuesday night was lots of fun. We played some games, had a lesson on upper back and neck massage while receiving one and I styled Mamie's hair to teach how to do short hair. We also ate some yummy refreshment's, vegi's and dip and for dessert, a strawberry parfait w/ yogurt. Have I mentioned how much I love our ward? Well, I love our ward! Just an awesome group of people.

While the girls enjoyed being pampered the boy's had fun at the baseball game. They got there early and received a free baseball cap with an astronauts signature and a bunch of cool NASA pictures. Well, cool to them any way. They left the game early and still didn't get home until 10:30. What a couple of worn out boy's Tom and Cole were when they got home. But it was a great night for all of us.

Today has been quite an eventful day and it still isn't over. This morning me and Cole went to a play group. He had fun watching all the kids run around and play. He hasn't learned how to play with others just yet. And I enjoyed the company of the other mothers. It's nice getting out of the house once in a while.

When we got home I got the dreaded phone call from my Dr. office. So yeah, I did fail my glucose test. What was I thinking!? Now I get to go back in on Thursday and take the three hour testing where they draw my blood every hour. Doesn't that just sound like fun. I am so thrilled. Goodness!

Good news though, I finally ordered Cole's car seat today! Now that, I am actually thrilled about. I also did my visiting teaching earlier. Very nice.

In about a half hour I will be leaving to go to enrichment for a night of pampering. I am also teaching how to style short hair. That should be fun. It's been a little while since I have done hair so I am looking forward to it. Tom and some of the other husbands took the kids and went to a Houston Astros baseball game. Boy's night out. That should be a lot of fun for them.

It's been a great day but I will be glad to get home for the night and unwind.

Chocolate Chip Cookies

Today I made some chocolate chip cookies. Not just any chocolate chip cookies but the famous Neiman Marcus chocolate chip cookies. There is a funny story behind the recipe I have. When I was working at Great Clips ages ago, a friend of our owner was shopping at Neiman Marcus when he took the opportunity to purchase a chocolate chip cookie from the snack bar. The cookie was so good he asked if the recipe was available. He was told that it was available for two fifty. He promptly had the amount put on his credit card. When he got the bill, he discovered a charge for $250.00 for the recipe. He immediately called the credit department and explained the misunderstanding. They told him that it was his problem and he was not getting a refund. After lengthy explanations the store would not give him a refund either. He then decided if he was out $250.00 he was at least going to have some fun for his money. He informed the store that he would be emailing the recipe to everyone he knew w/ the request that they pass it on to everyone they knew in hopes that Neiman Marcus would never sell another recipe in this manner. This is the first time I have actually made the cookies but they are very good. The funny thing is, now you can find that recipe on line for free. But I will pass it on to you so you don't have to look. I halved the recipe when I made them.

Ingredients-

2 cups butter (softened)
2 cups brown sugar
2 cups white sugar
4 eggs
2 tsp. vanilla
5 cups blended oatmeal
4 cups flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. salt
24 oz. milk chocolate chips
1 7oz. hershy bar (grated)

*Measure oatmeal and blend in food processor to a fine powder. Pour into a large bowl. Add flour, soda, baking powder and salt. mix well.
In a separate bowl mix butter and both sugars. Add eggs and vanilla. Mix with dry ingredients. Mix in chocolate chips and grated hershy bar.
Roll into balls and place 2 in. apart. Bake for 10 min. at 375. -makes 110 cookies

Last Week

OK, I was a slacker last week. After writing about our vacation I got a little burnt out and needed a break, but now I'm back and ready to go. I'll catch you up on the events of the week. Monday night I went to water aerobics with a bunch of the girls from the ward . It was a good work out. I'll probably be doing that every Monday night for a while to get some exercise. Tuesday I had put Cole in his bedroom and after a little bit realized it was awful quiet. I went and peeked in on him and he had climbed into his clothes hamper, and was sitting there playing with some of his new shoe's. It was so funny! I laughed to myself and went and grabbed the camera. That has been his thing lately, climbing in and on everything he can. He has become quite the little monkey. He is also officially walking now. We will have to get some video so you can see him in action.



Thursday I had another Dr. appointment and also my glucose testing. The baby's heart rate sounds great and so far I'm doing well too. Cross our fingers and hope it stays that way, NO Toxemia! I haven't got the results back from my glucose yet, but I'm pretty sure I passed. My test for chicken pox came back normal. Thank goodness! I didn't want to have to go to a specialist.

Avery is very active, especially at night. I think she's going to be a hand full if she keeps it up after she is born. Oh boy are we in for it!

Friday night we went to a celebration party for Tom's work because their contract was just extended another three years. Later that night we rented some movie's, like we always do on the weekends, and took it easy the rest of the night.

Saturday didn't feel much like a Saturday because Tom went to help a guy in the ward move from one house to another. After he got done there he ran into work for about an hour. He didn't get home until almost one. So a lot of the day was already gone and not having him at home just made it feel like another weekday. Once he did get home we went apartment hunting. I wish it were house hunting but unfortunately our Utah house still hasn't sold. We are living in a two bedroom and with a baby on the way it just isn't big enough. We have to give our apartment management 60 days notice of our moving out, which is next Saturday. We like putting things off till the last min. We would like to stay in our ward so it limits us on our choices. We had found an apartment we really liked but found out it was just barely out of the ward boundaries. So back to square one. We'll find something eventually. Saturday night we had some friends from the ward, Jeremy and Janice Dickerson, over for dinner. After dinner we played a really fun game, that I don't remember the name of, and had ice cream sandwiches. We had a fun time! Sunday was the usual, go to church and relax the rest of the day.

Home again, home again

We are back home in Houston. Cole and I flew in on Friday. Tom flew home Monday and flew out 2 hours later because he had training in Fort Worth, TX on Tuesday.

Our trip to Utah was fun! We stayed with Steve and Susan, Tom's parents, until Tom left and then me and Cole stayed with my mom and Reed the rest of the time. We were non stop the whole trip so we were quite exhausted.

THURSDAY-
We got into SLC, where my sister, Dee Dee, picked us up and surprised us by bringing my mom. It was so wonderful to see them both. We took Tom to the hospital to be with his dad, who had surgery that day, and then I was dropped off for my hair appointment. Dee took Cole back to her house and watched him while I got my hair done. She is so sweet! We didn't end up getting to bed until late so it was a long day.

FRIDAY-
We ran around all afternoon trying to get some things done. We had to take care of a fix it ticket Tom got just a week before our big move, for not having mud flaps on his truck. Is that ridiculous or what! But we didn't want to take the chance of him getting pulled over and then arrested while on vacation, so we payed his dues. That night we had our Clearfield High 10 year class reunion dinner. I started Clrfld. my junior year so I really didn't get to know too many people. I knew a lot of faces but that was about it. Tom on the other hand grew up with a lot of them so he had a little more fun than I did. The dinner was held at Maddox in Perry, UT. We drove up with Jarrod and Melanie Nelson, some of our good friends. Jarrod and Tom were good friends as kids and Jarrod graduated the same year as us. It was nice having Malanie there to talk to. We ate dinner, which was really good, and then afterwards we played a version of Deal or No Deal. It was ok. You have this vision in your head about how your reunion will be, and you make it out to be bigger than it really is. After all that excitement we went back to Jarrod and Melanie's and played games until 2:30 in the morning. Another really late night.

SATURDAY-
That afternoon we went to a family picnic for the reunion. We picked up some Subway and headed to the park. They had some raffle drawings where Cole's name was drawn and he won some bubbles, and my name was drawn and I got to pick between a HUGE stuffed snake or a tutu. Not that I really wanted either one but I chose the snake. It stayed at grandma Booths for all the grandkids to play with. There was no way I was getting that thing home in one of my suitcases. Later that evening we had a birthday party for Cole. It was a month late but it was still fun to celebrate his "Utah" birthday with the family. It turned out to be a great party, lot's of good food and good company. And the weather was perfect. After the big bash we went over to my brother, Travis's, house and watched fire works for the Clinton days. We were pretty close to the fire works and Cole loved watching and listening to them. It was a cold night though. Crazy for being July. But it was still fun.

Sunday-
We drove to Draper to spend the afternoon with my dad & Jen. We had some French toast, and then went through an enormous house just down the street from where they are staying. Why any one needs a house that big beats me. It was nice spending time with them. We then went to my mom and Reeds for a little while. It was good visiting with them too. Tom's dad came home that night so my mother-n-law had the family over for ice cream. You couldn't tell that Steve had just had surgery day's before. He looked well and with a little help from pain killers he said he felt pretty well. It was so good to have him home and that Tom was able to see him home before he had to leave.

Tom left Monday morning. It's hard being away from him so it was sad to say good bye at the airport. After dropping him off I ran and got some material for a rag quilt I was making for Avery. I spent that night cutting and arranging the pattern.

-Tuesday Cole and I ran around with my sister and nephew looking for matching outfits for Braxton and Cole to have pictures done in. We ran all over! Can you believe Target didn't have anything, Old Navy didn't have anything. Finally we went to Wal-Mart and I found a couple of shirts. After the boy's had a nap and a good lunch we had their pictures done by Dee Dee's friend, Jamie Kay. I don't have the pictures back yet but from what she showed me on her camera they look really good. I'm excited to get them! I had started sewing a little that day and made a small dent but there was a lot more to go. My family came over to my mom and Reeds house for dinner that night. We had, one of my favorite, marinated turkey breasts. Nummy! After we ate my mom made some homemade strawberry ice cream. So delicious! The boy's, like always, went out and played basketball. By the end of the night they each had some kind of war wound but they love to play so it doesn't stop them. Tom was missed! The girls stayed in where it was cool and played skip bo. It was a great night!

-Wednesday I sewed the whole day with little breaks here and there. I got to the outer boarder and started running out of thread. I had to take some from the bobbin a few times and then about half a foot away from being done with sewing I completely ran out of thread. Ahh... half a foot! So frustrating! I did end up finishing it the next day with some thread my mom had. Not the exact color but close enough that it worked. After I cleaned up Cole and I went to my in laws for dinner and to say our good bye's because we weren't going to be able to make it back before we left. My mother-n-law came with us to say good bye to the rest of Tom's family. Good bye's are always hard.

-Thursday Cole and I went to the Roy aquatic center with Melanie and her two boy's, Preston and Carter. We watched while the boy's had lot's of fun. It was so refreshing! A little later my dad came and picked me and Cole up and took us to see the house him and my step mom are buying in Kaysville. After, we went to Sizzler to eat with my dad, Jen, Bobby, Erica and Brody. So good! It is one of the restaurants I miss living in Houston. After dinner my dad dropped us back off at my mom's house. We then went to Cole's great grandma and grandpa Child. We were able to see their new home that they are having built as well. The rest of that night, after all the visiting, was spent packing.

-Friday we woke up and got the rest of our things together. Dee Dee and Braxton came and picked us up and drove us to the airport. Dee also helped me get our luggage checked in. Such a big help. I couldn't have done it without her. We sadly said our good bye's and Cole and I were off. Cole did pretty well on the flight. For the first half hour he was restless and cranky. Luckily it wasn't a full flight so we had the whole row to ourselves. I would have felt bad for any one that would have had to sit next to us. He ended up falling asleep which was very nice. It was funny. He fell asleep with his head on my belly and Avery started moving and kicking. She was kicking right where his head was. I was surprised he slept through it. I just had to laugh! She is already picking on her brother. At least we know she will be able to defend herself. He woke up when we were landed in Albuquerque and fell right back to sleep as we were taking off again. He slept the rest of the way only to wake up the last 15 min. of the flight. It was so wonderful. Cole was so excited to see his daddy and so was I. I really missed him. We went out to dinner that night and then went and rented some movies and relaxed the rest of the night. It's great being back as a family!

On our Way!

Well today is the day, We're going to Utah! I am so excited I can hardly contain myself! It's been just a little over three months since we moved here and Cole has grown so much in that time. I can't wait for the family to see how much he has changed in that short amount of time. I'm really hoping he does well on the flight. He did pretty well when we flew out here, so we shall see. Cross our fingers! I will be back on the 18th so there won't be any updates until sometime soon after that. I am sure that I will have a lot to write about when I do get back.

On a more serious note, Tom's dad goes in for surgery today. He has lung cancer, and they are going in with a scope to see if they can remove the big tumor. If they can't get it with the scope they will be cutting him open. We pray it doesn't have to come to that. We hope to find all well when we get into Salt Lake City. Please put him in your prayers!

What's Cookin'

Our Relief Society has a bunch of different groups, from a book group to a sewing group. Last night I went to a cooking group. We learned how to make pesto and things you can make with pesto. It was very good and most importantly, easy! We will learn a new recipe every month. It will be a lot of fun. I am really loving this ward. There is always something going on and I'm getting to know a lot of the sisters.

Basil-Walnut Pesto
----------
Ingredients:
1 cup lightly packed fresh basil, divided

1/4 cup toasted walnuts, divided

1 oz grated fresh Parmesan cheese

1/4 cup olive oil

2 garlic cloves, pressed

Directions:
1. Finely chop half of the basil and half of the walnuts together, using a food processor (mixture should resemble a thick paste); place into batter bowl. Repeat with remaining basil and walnuts.

2. Finely grate cheese. Add cheese, oil and pressed garlic to batter bowl. Mix well.

Yield: 15 servings

Nutrients per serving: (about 1 tsp pesto): Calories 50, Total Fat 5 g, Saturated Fat 1 g, Cholesterol 0 mg, Carbohydrate 1 g, Protein 1 g, Sodium 30 mg, Fiber 0 g


Mini Pesto Pizzas
----------
Ingredients:
2 plum tomatoes

1/4 cup (1 oz) grated fresh Parmesan cheese

1 pkg (13.8 oz) refrigerated pizza crust

1/3 cup prepared basil pesto or Basil-Walnut Pesto

1 cup (4 oz) grated mozzarella cheese

Directions:
1. Preheat oven to 425°F. Slice tomatoes; set aside. Grate Parmesan cheese.

2. Place dough onto Cutting Board (do not unroll dough). Using a sawing motion, slice dough into 15 disks (about 1/2 in. thick). Place disks onto Large pan; lightly press to flatten and seal seams.

3. Spread 1 tsp pesto over each crust. Divide mozzarella cheese evenly among pizzas. Top each pizza with one tomato slice and Parmesan mixture. Bake 12-15 minutes or until crusts are golden brown. Remove pan from oven. Serve

Yield: 15 servings

Nutrients per serving: Calories 140, Total Fat 7 g, Saturated Fat 2 g, Cholesterol 5 mg, Carbohydrate 14 g, Protein 6 g, Sodium 300 mg, Fiber less than 1 g

New Cousin

Cole has a new Cousin! On July 1st, Tom's oldest brother, Jeff and his wife, Emma, who live in England, had their second baby, a little boy. Kai Jeffrey Booth. He weighed 7lbs. 14oz. Seeing that they live so far away, it may be awhile until we get to meet little Kai, but look forward to the day we do.

Walkin' Boy

Cole is very close to walking! I know we've been saying that for a while, but really he is. So far he has taken up to four steps! It is so exciting watching him learn. Here is a tiny glimpse of some of his steps.

Thursday & the Three Day Weekend

Thursday, the 3rd, Cole and I went and hung out with some more new friends from the ward, Mamie & Lucy Benac. Mamie is also one of my visiting teachers. She came and picked us up, since we temporarily have no car, and we went to a near by park. I helped Cole swing and go down a slide for the first time. He didn't really know what to think about it. After playing briefly on the toys we went and found a shady spot down by the water. Cole ate his snacks and Lucy ran around and played. She is just a little older than Cole so it makes it fun for him. Now if only he was walking, he could keep up with all his new little friends. Mamie and I sat and talked until the heat got to be too much. We packed up and went back to her house for a little while. We had a great time. It was really nice for me to get out of the house. I love all the friends we are making here.

On the 4th of July we had a lot of fun. We had a ward party that morning where we ate and laughed with friends. We had to leave before the games because Cole was getting cranky. We took him home for a nap and enjoyed a nap ourselves. So wonderful! After our naps we went and bought some luggage for our up coming trip to Utah. That night, Mana and Annette picked us up and we caravaned to the Clear Lake Park to watch some fire works, where we met up with a few other families from the ward. It was a very good night. There was a nice breeze that cooled it of just enough. It was fun being out and socializing. After the fire works Mana, Annette and their boy's came back to our apartment and we had strawberry desert and ice cream. What a great ending to a great day!

Saturday we ran to USA Baby looking for a convertible car seat for Cole. How wonderful now that he is big enough to fit in one. We found a couple we liked but couldn't decide between them. After about four hours all we left with was knowing what crib we are going to get for Avery. We went to Wendy's for lunch and Cole had his first kids meal; chicken nuggets, mandarin oranges, and some chocolate milk. He ate the whole thing. What a growing boy! For dinner that night we went to Texas Road House. Gosh, sounds like all we do is eat! When we got home later that night, I did some research on the two car seats and finally decided on the one we want. Even better,USA Baby only had this car seat in one color, but I found it in five different colors on line. So once we get home from Utah I will be ordering it. So it wasn't a completely useless day.

Making New Friends

Last night we had a chance to baby sit a little boy from the ward, Benjamin. He is 2 & 1/2 months older than Cole so it was fun for him to have a buddy for a few hours. It was good to watch Cole interact with another kid. The only other time he gets to is on Sunday's at church. It went well. At first Benji was sad when his dad left, but after he got used to use he opened up and had a great time. Watching Benji walking around made Cole really want to walk so he may just be walking by the time we go to Utah. We'll keep our fingers crossed. Once his parents and older brother came to pick him up the adults had a chance to visit while all the kids played. We all got along great!Cole and Benji building with blocks under the high chair
