French Toast Roll Ups

I forgot to take a picture of this...but OH MAN, is it good!! I had some friends over today and this is what we had for lunch with whipped cream and strawberries. It was a hit. It's as good just how it is, and it's GREAT finger foods that even kids will LOVE.

Ingredients
1 (8-ounce) package cream cheese, softened 
1 egg yolk 
1 cup sugar, divided 
24 slices white sandwich bread, crusts removed 
1 tablespoon ground cinnamon 
3 tablespoons butter, melted 

Instructions

1. In bowl, beat cream cheese, egg and 1/4C. sugar until smooth and set aside. 

2. Roll out each bread slice with a rolling pin. 

3. Spread cheese mixture over bread, distributing evenly. 

4. Roll up each slice jellyroll-style and place seam-side down on a baking sheet.


5. In a shallow dish, combine remaining 3/4 cup sugar and the cinnamon. 

6. Brush butter over rollups then roll them in the cinnamon-sugar mixture, until completely coated. 

7. Cover and freeze at least 2 hours, or up to 2 months. (I don't think you really have to do this part) 

8. Just before serving, preheat the oven to 400 degrees F. Bake rollups 10 to 12 minutes, or until golden.
